When you’re dreaming of spring but winter just won’t quit, you find a way to make the best of it. I asked my girls what they thought about our record breaking snowfall in the month of April. They said four words, “best of both worlds”! I absolutely love their attitude. And you know what, they are so right. It really is despite how much we’re aching to see green and backyard bbq and gardening and flowers and swinging in the hammock, and long walks after dinner to the corner shop for ice cream. We love our warm weather routine just as much as we love the cooler months that keep us cozy.
This past weekend we couldn’t stop gasping at how much snow was falling and how fast the inches of fresh white powder grew. We officially broke a record here in Minnesota that dated back to 1983 when we got 14 inches of snow mid April. I was 2. Now, while this may say something about how old I am, the biggest thing about all of this is that we literally crushed the record by 4 inches. How crazy is that?!
I know spring hasn’t been showing up for other parts of the county as well. It’s hard to believe that we are more than half way through April and we have yet to see a flower in bloom or green sprouting. So my girls and I decided that instead of dwelling on the all these facts, we should celebrate with what we’ve been given by combing the best of both worlds with some good ol’ fashion SNOW ICE CREAM!
We are so excited to share this recipe with you because we know it will be extra special to the ones that can actually make it. We realize that every single one of you are from different parts of the county. Opposite side of the world even. Which makes this recipe rare to only those that live or visit the experience of what winter can bring. In this case, spring brought us the most beautiful fresh powdery white snow so we thought we’d give it a taste of spring!
Vanilla Rose + Almond Snow Ice Cream
Serves up to six people (give or take depending on size of scoop)
Prep Time: 40 minutes including time to let snow ice cream sit in freezer
Ingredients
4 cups fresh clean white snow
1 can of sweetened condensed milk
1 tsp vanilla extract
1/4 of tsp rose water (optional)
Crushed almonds (optional)
Instructions
Gather 4 cups of fresh clean white snow and place in mixing bowl.
Use another bowl and mix a can of sweetened condensed milk, 1 tsp vanilla extract, and rose water (optional) in mixing bowl. Stir until ingredients are combined well. Pour mixture over snow and mix together. Place in freezer for 30-40 minutes and it’s ready to serve. Sprinkle with crushed almonds or whatever your heart desires. Enjoy!
